Salsa Verdi

For dipping seafood or sprinkled over fish dishes
 

 
 
 

Ingredients

  • 1 garlic clove, crushed
  • 4 anchovy fillets (tinned)
  • 2 tbsp chopped capers
  • 6 tbsp chopped flat-leaf parsley
  • 30g breadcrumbs
  • Juice from half a lemon
  • 5 tbsp olive oil
  • Pinch of salt and freshly ground black pepper

Method

An Italian sauce that can be used for dipping seafood or sprinkled over fish dishes.

  1. Place the garlic, anchovies, capers, parsley, breadcrumbs and salt & pepper in a food processor until pureed. Add the lemon juice and olive oil and process until smooth.
